Bring the campfire to your kitchen with these gluten-free s’more cookies.


  • 3 cups confectioners' sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3 large egg whites, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • 1/4 cup graham crackers, crushed
  • 1/4 cup mini marshmallows


  1. Combine sugar, cocoa powder, and salt, then add egg whites and vanilla. Mix until thick and glossy.
  2. Add remaining ingredients, stirring gently.
  3. Bake for 10 minutes at 350 degrees Fahrenheit.
  4. Top with additional mini marshmallows and crushed graham crackers, if desired.
