Peanut Butter Oatmeal Cookies(1 of 8)

People who like to eat peanut butter out of the jar need to try baking this recipe at home. If you have been a longtime fan of the Girl Scout version of these cookies, this is as close as you can get to it.
Start baking so you and your family can enjoy eating this delicious snack at home.
Ingredients
- 3/4 cup of all-purpose flour
- 1/2 tsp of baking soda
- 1/4 tsp of baking powder
- 1/2 tsp of salt
- 1/2 cup of softened butter
- 1/2 cup of creamy peanut butter
- 1/2 cup of white sugar
- 1/2 cup of light brown sugar (packed)
- 1 egg
- 1 tsp of vanilla extract
- 1 cup of oats (quick cooking)
- 3 tbsp of softened butter
- 1 cup of confectioners' sugar
- 1/2 cup of creamy peanut butter
- 2 1/2 tbsp of full-fat whipping cream
Preparation
- Combine 1/2 cup of peanut butter, 1/2 cup of margarine, brown sugar, white sugar, and vanilla in a bowl.
- Add in the egg and beat.
- Combine baking soda, salt, baking powder, and flour in another bowl.
- Add the dry mixture to the creamy mixture and stir to combine.
- Add oatmeal and mix.
- Use a teaspoon to drop dough ball onto the baking sheet.
- Use a form to make 1/4 inch cookies.
- Bake for about 10 minutes at 350 degrees Fahrenheit.
- Make the filling by adding 3 tbsp of margarine with 1/2 cup of peanut butter, cream and confectioners' sugar in a bowl.
- Spread the filling on top of the cookies, add another cookie to make a sandwich, and serve.
This recipe is very confusing. It says 1 1/4 cups of sugar in list of ingredients, then tells you to put granulated sugar in with flour. Next sentence you are mixing granulated sugar (1 cup) with butter. Then later it says use rest of granulated sugar with cinnamon, what rest of granulated sugar? These cookies better be edible after wasting all of these ingredients!!!
