After a rigorous workout session, all you need is a power-packed meal that is able to soothe your muscles and make you feel fulfilled. This curried egg salad has the goodness of protein and lots of nourishment from the greens.
Ingredients
- Salt and pepper, to taste
- 6 hard boiled eggs
- 2 teaspoons curry powder
- 2 cloves roasted garlic
- 1/4 cup mayonnaise
- 1/2 red bell pepper, seeded and finely diced
- 1 stalk celery, finely diced
- 1 heaping teaspoon Dijon mustard
- 1 ciabatta, sliced in thirds and halved
Preparation
- Mash eggs in a large bowl using a fork.
- Add diced red pepper and celery into the bowl.
- Now take another bowl and combine the roasted garlic, mustard, curry powder, mayonnaise, salt and pepper.
- Add this mayonnaise mixture to the bowl with boiled eggs.
- On one piece of ciabatta, place a little salad and enjoy with a healthy drink of your choice.
