Ingredients
- 4 tablespoons olive oil
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced red bell pepper
- Green onions (1 bunch, sliced)
- 1 cup chopped Italian parsley
- Freshly ground black pepper
- Sweet potatoes (3 ½ cups, peeled, diced, 1/2-inch cubes)
- ½ cup water, divided
- 1 ½ pounds cooked chicken breasts, cubed (1/2 -inch cubes)
- ½ teaspoon salt
Preparation
- In a microwave safe bowl, add the potatoes and 4 tablespoon water and cover it before placing it inside.
- Heat the water on high until the potatoes have softened.
- In a deep skillet, heat oil over medium heat and add bell pepper, onion, and celery.
- Cook the vegetables stirring until tender.
- Now add the remaining water, the chicken, green onions, and potatoes to the skillet and heat.
- Once thoroughly heated, remove from heat and fold in the parsley and salt and pepper.
- Use a large fork to breakdown the potatoes and dig in.
