Ingredients

  • Kosher salt
  • Freshly ground black pepper
  • 4 skinless, boneless chicken breasts
  • 3 tbsp. cold unsalted butter
  • 2 tsp. lemon zest
  • 1½ c. sugar snap peas
  • 1½ c. snow peas
  • 1 tbsp. chopped fresh tarragon
  • 1 large shallot
  • 1 clove garlic
  • ⅓ c. dry white wine
  • 1½ c. sliced asparagus spears

Preparation

  1. First season the chicken with 1 and a quarter tsp salt and about ¾ tsp of pepper.
  2. Now add 1 tsp of melted butter into skillet and place it over medium-high heat.
  3. Put the chicken into the skillet and cook it until it gets a deep golden brown color for 4 to 6 minutes.
  4. Now turn the chicken and reduce the heat to medium and cook it until the chicken reaches a temperature of 165 degrees F, which should take 6 to 8 minutes. Place it into a plate after that.
  5. Add some shallots into the skillet and cook them on medium-high heat until they are soft for 1 minute.
  6. Now add wine and cook, while scraping the brown bits from the bottom of the skillet, till it gets reduced by ¾ for 2 to 4 minutes.
  7. Now add some garlic and then cook until they are fragrant for 1 minute.
  8. Now add some tarragon and 2 tbsp of butter, and season it with some salt and pepper.
  9. Sprinkle lemon zest and serve it hot.
