This is a delightful chicken dish, which is healthy and light, making it the perfect dinner meal over the weeknight, and is sure to be a hit amongst any guests that you are entertaining.

Ingredients
- 5 tbsp. olive oil
- 4 skinless, boneless chicken breasts
- 3 small baby cucumbers
- 3 scallions
- 3 clove garlic
- 2 tbsp. fresh lemon juice
- 2 oz. crumbled feta cheese
- 1½ tsp. greek seasoning
- 1 tbsp. finely grated lemon zest
- 1 tbsp. chopped fresh thyme
- 1 c. royal rice blend
- 1 c. halved grape tomatoes
- 1 c. fresh flat-leafed parsley
- ⅓ c. dry white wine
- ¼ c. sliced fresh mint
Preparation
- Preheat the oven to a temperature of 400 degrees F
- Now add some lemon zest, Greek seasoning, 2 minced garlic cloves, 2 tablespoons oil, and thyme in a bowl. Rub them on chicken, and pour wine into a baking dish which is 11 by 7 inches and add the chicken into it.
- Now bake it until the internal temperature reaches 165 degrees F for about 28 to 30 minutes.
- Let the chicken rest for 5 minutes before slicing it.
- In the meantime, start preparing the rice, and then transfer it into a bowl.
- Add some tomatoes, mint, parsley, clove garlic, 3 tablespoons oil, lemon juice, feta, scallions, and cucumbers into the bowl.
- Serve the rice warm or at room temperature, topped with the chicken.
