This tender-crispy chicken dish is best served in a cream sauce, which is so good that it will make you lick your fingers clean afterwards. If you really want to make a chicken dish with a sauce, then make this one, because it has got everything that you want.
It’s not like an ordinary chicken dish, since it has an amazing sun-dried tomato cream sauce with tender crispy chicken thighs. Mmm, it definitely sounds good, but it tastes even better. Furthermore, the sauce is so delicious, it will have you leaving the chicken and eating the sauce with a spoon!

Ingredients
- Kosher salt and freshly ground black pepper, to taste
- 8 bone-in, skin-on chicken thighs
- 3 tablespoons unsalted butter, divided
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes, or more, to taste
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 cup freshly grated Parmesan
- 1/4 cup basil leaves, chiffonade
- 1/3 cup julienned sun dried tomatoes in olive oil, drained
- 1/2 cup heavy cream
- 1 cup chicken broth
Preparation
- Preheat the oven to 400 degrees F
- Season the chicken thighs with salt & pepper, to taste
- Now melt 2 tbsp of butter in a skillet, which is oven proof and put it over medium high heat.
- Add the chicken, with the skin-side down, and then sear both sides, until it is golden brown. Set the chicken away once it gets the color.
- Melt the remaining butter in the skillet and add red pepper flakes and garlic.
- Stir it frequently for a couple of minutes and then stir it into chicken broth, Parmesan, thyme, sun-dried tomatoes, heavy cream, oregano and basil.
- Bring it to a boil, and then reduce the heat to let it simmer for about 3 to 5 minutes. Now return the chicken to the skillet.
- Put it into the oven and roast it completely for 35 to 30 minutes at a temperature of 175 degrees F.
- Now you can serve it immediately, garnished with basil if desired.
