Ingredients
- Lean ground turkey, 1 ½ lbs
- 1 onion, chopped
- 1 small bunch of spinach, chop leaves
- Fresh flat-leaf parsley (chopped), 1 cup
- Dijon mustard, 2 tbsp
- Whole-wheat bread crumbs, ½ cup
- 1 large egg (white only)
- Kosher salt, to taste
- Black pepper, to taste
- Red potatoes (quartered), 2 lbs
- Ketchup, ¼ cup
- Buttermilk, 1 cup
- Extra-virgin olive oil, 1 tbsp
- Marinara sauce (warm), ¼ cup
- Lettuce leaves, a few
Directions
- Set the oven to preheat at 400 degrees F.
- Combine turkey, spinach, onion, bread crumbs, parsley, egg white, and mustard in a large bowl. Season with salt and pepper and mix well.
- Prepare a 10-inch loaf pan with baking sheet and transfer the turkey mixture. Smooth out and top with ketchup. Set to bake for 50 minutes until cooked through.
- To prepare mashed potatoes, add potatoes to a large pot of water. Bring to a boil. Adjust head to low and simmer for 15 minutes until tender.
- Mash potatoes with oil and buttermilk. Season with salt and pepper and mix well.
- To serve the meatloaf, spread lettuce leaves on a serving platter and place meatloaf on top of it. Slice as you like. Serve potatoes and marinara sauce on the side and enjoy!
