Ingredients

  • 10 dried apricots (chopped)
  • 1/2 tsp of cinnamon
  • 1/2 cup of shredded coconut (unsweetened)
  • 1 cup of raisins
  • 1 cup of almonds

Preparation

  1. Place the raisins, almonds, and cinnamon in a food processor and blend to make a paste for about 3 minutes.
  2. Add the apricots and blend for another 30 seconds.
  3. Add the coconut and blend for another 10 seconds.
  4. Take out the dough and put it on top of plastic wrap on the counter.
  5. Pull up each side of the plastic wrap to form a square shape.
  6. Keep the plastic layer in your hand to prevent the dough from sticking.
  7. Place the wrapped dough into the freezer for about 30 minutes.
  8. Use a knife to slice the dough into 25 bite-sized squares.
  9. Place them in a container and put it in the fridge.
