8) Chewy Apricot Cookie Bars (8 of 8)

Ingredients
- 10 dried apricots (chopped)
- 1/2 tsp of cinnamon
- 1/2 cup of shredded coconut (unsweetened)
- 1 cup of raisins
- 1 cup of almonds
Preparation
- Place the raisins, almonds, and cinnamon in a food processor and blend to make a paste for about 3 minutes.
- Add the apricots and blend for another 30 seconds.
- Add the coconut and blend for another 10 seconds.
- Take out the dough and put it on top of plastic wrap on the counter.
- Pull up each side of the plastic wrap to form a square shape.
- Keep the plastic layer in your hand to prevent the dough from sticking.
- Place the wrapped dough into the freezer for about 30 minutes.
- Use a knife to slice the dough into 25 bite-sized squares.
- Place them in a container and put it in the fridge.
