What is there not to love about almonds and honey? The sweet and nutty combination will make your taste buds crave more.

You can eat these energy power bars before you hit the gyms. If you are lifting weights, you will need all the power you can get.

Ingredients

  • 1/8 tsp of salt
  • 1/4 cup almonds (without skin)
  • 1/4 cup of sunflower seeds
  • 1/4 cup of almond butter
  • 1/4 cup of sugar (turbinado)
  • 1/4 cup of honey
  • 1/3 cup of currants
  • 1/3 cup of dried apricots (chopped)
  • 1/3 cup of raisins (chopped)
  • 1/2 tsp of vanilla extract
  • 1 cup of rolled oats
  • 1 tbsp of flaxseeds
  • 1 tbsp of sesame seeds
  • 1 cup of puffed cereal (whole-grain and unsweetened)

Preparation

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Use a cooking spray to coat a square pan (8-inch)
  3. Spread almonds, oats, sunflower seeds, sesame seeds, and flaxseeds on a rimmed baking sheet.
  4. Bake the mixture for about 10 minutes, shaking the baking pan halfway into the cooking.
  5. Put everything into a bowl.
  6. Add currants, raisins, apricots, and cereal into the bowl and mix to combine.
  7. Add sugar, almond butter, salt, honey, and vanilla into a saucepan.
  8. Place the pan over medium-low heat, stirring often, for about 5 minutes.
  9. Place the almond butter mixture on top of the dry mixture and use a spoon to mix them together.
  10. Place the combined mixture onto a baking pan.
  11. Use your hands to press down the mixture to make a leveled layer.
  12. Place the mixture in the fridge for 30 minutes.
  13. Make 8 bars and place them in a container.
