Ingredients
- ½ cup of chopped up fresh cilantro
- 2 cans of drained and rinsed black beans
- 1 cup of frozen corn kernels
- Ground black pepper and salt according to taste
- ¼ teaspoon of cayenne pepper
- 1 teaspoon of ground cumin
- 1 ½ cups of vegetable broth
- ¾ cup of quinoa
- 3 cloves of chopped garlic
- 1 chopped onion
- 1 teaspoon of vegetable oil
Preparation
- Take a sauce pan and heat up the oil; do so on medium heat. Cook and stir the garlic and onion for about 10 minutes until they have become lightly brown.
- Mix quinoa in the onion mixture and cover with the help of the vegetable broth. Season this using pepper, salt, cayenne pepper, and cumin. Boil the mixture. Cover it, reduce the heat, and then simmer until the quinoa becomes tender and the broth has been absorbed. This may take around 20 minutes.
- Stir the frozen corn in the saucepan and continue simmering until they have been heated through and through for around 5 minutes. Mix the cilantro and black beans in.
