Ingredients

  • 1 tablespoon of honey
  • 1 ½ tablespoons of lemon juice
  • ½ cup of orange juice
  • 1 tablespoon of dried parsley
  • 1 ½ teaspoons of garlic powder
  • 1 tablespoon of lemon pepper
  • 5 salmon fillets
  • 1 ½ tablespoons of olive oil
  • 1 thinly sliced onion
  • 2 oranges that are sliced in rounds

Preparation

  1. Preheat your oven to 200 °C
  2. Take a small cup or bowl and stir dried parsley, garlic powder, and lemon pepper together in it. Place slices from one orange at the bottom of a baking dish of 9×13 inches in a single layer. On top of these orange slices, put a layer of the onion slices. Drizzle this with some olive oil and sprinkle this using half herb mixture.
  3. Place this in your preheated oven and roast it for around 25 minutes until the onions have become tender and brown. Remove from the oven. Increase oven temperature to 220 degrees.
  4. Push orange and onion slices towards the baking dish’s outer edge. Place salmon fillets right in the center. Season this with the remainder or your herb mixture. Whish honey, lemon juice, and orange juice together using a small bowl. Pour this on top of the salmon evenly.
  5. Bake this for around 12 to 15 minutes in the preheated oven until the salmon has become opaque right in the center. Remove these fillets and keep them in a serving dish. Discard roasted orange. Garnish the fillets using fresh orange slices and roasted onions.
  6. You can use aluminum foil to keep your granola bars moist, allow it to cook evenly, and make it easier to clean up afterwards.
