Ingredients
- 1 cup of strawberries (chopped)
- 1/2 cup of sugar (divided)
- 5 tbsp of water (divided)
- 3/4 tsp of gelatin (unflavored)
- 1/2 cup of full-fat whipping cream
- 2 egg whites
- 1/4 tsp of vanilla extract
- Dash of salt
Preparation
- In a bowl of a food processor, combine 1 tbsp of sugar and strawberries. Let it stand for 10 minutes and process.
- In a bowl, pour 2 tbsp of water. Add gelatin and let it stand for about 5 minutes.
- Add 6 tbsp of sugar, 3 tbsp of water, and dash of salt into a pan over medium-high heat.
- Bring it to a boil and cook it without stirring it for 4 minutes.
- Put the egg whites into the gelatin mixture and use a mixer to beat it at high speed until it becomes foamy.
- Add 1 tbsp of sugar and continue beating until soft peaks start to form.
- Add the hot syrup to the egg white mixture and beat it at medium speed, and then at high speed.
- Add vanilla and beat.
- In a bowl, put the cream. Beat it with a mixer at high speed.
- Fold one-fourth of the egg mixture into the whipped cream.
- Fold the rest of the egg white mixture followed by the strawberry mixture.
- In each glass, put 1/2 cup of mousse and place it in the fridge for 2 hours.
- Serve cold.
