Corn Chips Served With Salsa Verde(5 of 6)

Ingredients
- 2 cups of kernel yellow whole corn (frozen and thawed)
- 5 tsp of olive oil (divided)
- 9-oz. of ground beef sausage links (without casings)
- 1 sweet onion (chopped)
- 2 tsp of chili powder
- 1 tsp of ground cumin
- 1 bottle of salsa verde
- 2 cans of green chilies (chopped)
- 1 can of navy beans (drained and rinsed)
- 2 tbsp of lime juice
- 6 cups of original flavored corn chips
- 1 cup of pepper Jack cheese (shredded)
Toppings:
- Cilantro
- Radishes
- Avocado
Preparation
- Place 3 tbsp of oil in a skillet over medium heat, place corn into to, sauté it for about 4 minutes, and remove them from the skillet.
- Cook the sausage in a skillet over medium high for 8 minutes, remove from the skillet, and soak them on paper towels.
- Place 2 tbsp of oil into the skillet over medium high heat, add the onion, and sauté it from 5 minutes.
- Add the chilies, salsa, and sausage.
- Cook the ingredients over medium heat, stirring frequently, for about 8 minutes.
- Remove the skillet from heat; add the corn, lime juice, and beans into it.
- Serve the mixture with chips and the toppings.
