Ingredients

  • 2 cups of kernel yellow whole corn (frozen and thawed)
  • 5 tsp of olive oil (divided)
  • 9-oz. of ground beef sausage links (without casings)
  • 1 sweet onion (chopped)
  • 2 tsp of chili powder
  • 1 tsp of ground cumin
  • 1 bottle of salsa verde
  • 2 cans of green chilies (chopped)
  • 1 can of navy beans (drained and rinsed)
  • 2 tbsp of lime juice
  • 6 cups of original flavored corn chips
  • 1 cup of pepper Jack cheese (shredded)

Toppings:

  • Cilantro
  • Radishes
  • Avocado

Preparation

  1. Place 3 tbsp of oil in a skillet over medium heat, place corn into to, sauté it for about 4 minutes, and remove them from the skillet.
  2. Cook the sausage in a skillet over medium high for 8 minutes, remove from the skillet, and soak them on paper towels.
  3. Place 2 tbsp of oil into the skillet over medium high heat, add the onion, and sauté it from 5 minutes.
  4. Add the chilies, salsa, and sausage.
  5. Cook the ingredients over medium heat, stirring frequently, for about 8 minutes.
  6. Remove the skillet from heat; add the corn, lime juice, and beans into it.
  7. Serve the mixture with chips and the toppings.
