People who crave spicy food will definitely be in awe of this recipe, as the meatballs are swimming in a pool of spicy chili sauce.

Ingredients

  • 1 poblano pepper
  • 1 white onion (chopped)
  • 2 cloves of garlic
  • 1/2 cup of cilantro leaves
  • 1/2 cup of corn chips (crushed finely)
  • 1/4 cup of milk
  • 2 eggs
  • 1 1/2 tsp of salt (kosher)
  • 1/2 tsp of  black pepper
  • 2 pounds of ground chuck beef
  • cooking spray
  • 2 cans of spicy enchilada sauce
  • 2 cups of chicken broth (low-sodium)
  • 2 1/2 tbsp of sugar (divided)
  • 1 cup of sour cream
  • 1 tsp of lime zest
  • 2 tbsp of  lime juice
  • 6-inch warmed corn tortillas

Toppings:

  • Cotija cheese
  • Radishes
  • Toasted shelled
  • Pumpkin seeds
  • Cilantro sprigs
  • Avocado
  • Red leaf lettuce

Preparation

  1. Preheat your broiler, keeping it 5 inches away from the heat.
  2. Broil the pepper and poblano on a baking pan lined with foil for 8 minutes.
  3. Put the poblano in a zip-loc bag and place it in the freezer for 10 minutes.
  4. Peel the skin off the poblano, throw away the seeds, and stem.
  5. Pulse the onion, poblano, garlic, and cilantro in your food processor.
  6. Put milk and corn chips in a bowl and allow it to stand for 5 minutes.
  7. Add the eggs, black pepper, salt, and poblano mixture.
  8. Fold in the beef, shaping it into 1 1/2 inch meatballs and place them slightly apart on a greased jellyroll pan lined with aluminum.
  9. Preheat your oven to 400 degrees Fahrenheit and bake for 12 minutes.
  10. Place the meatballs in an oven; add chicken broth, enchilada sauce, and 1 tbsp of sugar.
  11. Bring the ingredients to a boil over high heat, and then decrease the heat to medium to let it simmer for 20 minutes.
  12. In a bowl, whisk together zest, sour cream, and lime juice.
  13. Add the rest of the sugar.
  14. Serve the meatballs with the toppings.
