Honey-Glazed Carrots(6 of 15)

If you’ve got family members who claim they hate carrots, serve honey-glazed carrots as a side dish. The honey sweetens the carrots without overpowering them.
Ingredients
- 1 tablespoon of vegetable oil
- 2 pounds of carrots, cut into 1-inch pieces
- 1 cup of chicken broth or water
- 1/2 cup of honey
- 2 tablespoons of red-wine vinegar
- Salt and pepper
- 2 tablespoons of unsalted butter
Preparation
- Heat oil over medium-high heat in a skillet, then add carrots. Cook for about 2 minutes, stirring once.
- Add all ingredients except butter. Bring carrots to a boil, then reduce to a simmer and cover. Cook for 7 to 9 minutes.
- Add butter to the cooked carrots and season with additional salt and pepper, if desired.
