Apple Fennel Stuffing(7 of 15)

Most sides focus on vegetables, but this one gets its semi-sweet taste from a fiber-rich apple.
Ingredients
- 1 loaf of French bread
- 1 tablespoon of oil
- 1 medium onion
- 1 large apple
- 1 large fennel
- 1 tablespoon of dried sage
- 1 teaspoon of salt
- 1 container of vegetable broth
Preparation
- Cut the loaf of bread into 1-inch cubes. Leave out overnight, if possible, as stale bread works best for this recipe.
- Chop the apple and fennel into small pieces, and dice the onion.
- Heat the oil in a dutch oven over medium-high heat.
- Add the onions, apple, fennel, sage, and salt.
- Saute until the onions and fennel become soft but not mushy, approximately 7 to 10 minutes.
- Add the bread to the dutch oven.
- Pour the broth over the stuffing mixture and toss to combine, then cover and bake for 5 minutes.
