Most sides focus on vegetables, but this one gets its semi-sweet taste from a fiber-rich apple.


  • 1 loaf of French bread
  • 1 tablespoon of oil
  • 1 medium onion
  • 1 large apple
  • 1 large fennel
  • 1 tablespoon of dried sage
  • 1 teaspoon of salt
  • 1 container of vegetable broth


  1. Cut the loaf of bread into 1-inch cubes. Leave out overnight, if possible, as stale bread works best for this recipe.
  2. Chop the apple and fennel into small pieces, and dice the onion.
  3. Heat the oil in a dutch oven over medium-high heat.
  4. Add the onions, apple, fennel, sage, and salt.
  5. Saute until the onions and fennel become soft but not mushy, approximately 7 to 10 minutes.
  6. Add the bread to the dutch oven.
  7. Pour the broth over the stuffing mixture and toss to combine, then cover and bake for 5 minutes.
