Spinach With Pancetta(10 of 15)

Make cooked greens palatable with salty pancetta or bacon. We like to top this with a cream sauce, but you don’t have to.
Ingredients
- 6 thin slices of pancetta or 2 slices of bacon, chopped
- 3 bunches of flat-leaf spinach, trimmed
- 1 teaspoon fresh lemon juice
- Salt and pepper, to taste
Preparation
- Heat a large skillet over medium heat. Add pancetta or bacon and cook until crisp.
- Transfer pancetta to a paper-towel-lined plate, but leave the fat in the skillet.
- Add spinach to the skillet, and season it with salt and pepper. Cook, tossing spinach and adding more as it wilts. Cook until tender, about 2 minutes.
- Remove the spinach from the heat, and pour off excess liquid. Stir in lemon juice, then top with pancetta.
