This pistachio and plum quinoa is all you need to start your day with a boost of energy. This recipe is a great alternative to waffles. It is also quite easy-to-prepare.
Ingredients
- 1/4 cup water
- 1/4 teaspoon salt
- 1/4 cup chopped pistachios
- 1 1/2 cups milk
- 1/2 teaspoon cinnamon
- yogurt, for serving
- pinch of freshly grated nutmeg
- milk, for serving
- 1 tablespoon vanilla extract
- 1 cup uncooked quinoa, rinsed
Stewed Plums:
- 1/4 cup honey
- 1/2 cup water
- 4 plums, sliced
Preparation
- Preheat the oven to 350 degrees Fahrenheit.
- Spray non-stick cooking spray on a baking dish.
- In a bowl, combine together salt, nutmeg, milk, vanilla, milk, cinnamon, and quinoa.
- Add these ingredients to the baking dish and bake for 20 minutes.
- Stir the ingredients in the baking dish to ensure that the milk is well-combined.
- Bake for 20 more minutes or until the milk is absorbed.
- When the quinoa is in the making, prepare the stewed plums.
- In a saucepan, add honey, plums, and water, and cook over medium-low heat.
- Let the mixture come to a boil and stir occasionally.
- Once the plums are soft, remove from heat.
- Now add quinoa into a bowl and pour milk on top.
- Garnish the quinoa with pistachio and spoon some plums on top and enjoy.
