Ingredients
- Dill sprigs, to serve
- 6 poppy seed bagels, split
- 250 ml fat-free cream
- 20 g vegan butter
- 2 tablespoons finely chopped flat-leaf parsley
- 2 tablespoons finely chopped chives
- 12 smoked salmon slices
- 12 eggs
Preparation
- In a large bowl, mix together the eggs and cream, and season with salt and pepper to taste.
- Place a large pan over low heat and add butter to it.
- Once the butter starts to get foamy, add the egg mixture into the pan.
- Using a wooden spoon, gently push the egg batter in all directions.
- Scrape the sides of the pan to ensure that egg doesn’t stick.
- Let the egg cook until it is only slightly creamy.
- Remove from heat and combine parsley and chives with the egg.
- Now, preheat a grill on high and toast the bagels by placing the cut side up.
- Once the bagels are toasted, place smoked salmon slices and spoon scrambled eggs on top.
- Enjoy with a sprig of dill.
