If you want to enjoy a complete breakfast that is healthy and delicious, try this smoked salmon bagel with scrambled eggs and herbs recipe. This recipe might sound a little intimidating, but it is quite simple to make. The addition of herbs in scrambled eggs just makes this recipe even healthier.

Ingredients

  • Dill sprigs, to serve
  • 6 poppy seed bagels, split
  • 250 ml fat-free cream
  • 20 g vegan butter
  • 2 tablespoons finely chopped flat-leaf parsley
  • 2 tablespoons finely chopped chives
  • 12 smoked salmon slices
  • 12 eggs

Preparation

  1. In a large bowl, mix together the eggs and cream, and season with salt and pepper to taste.
  2. Place a large pan over low heat and add butter to it.
  3. Once the butter starts to get foamy, add the egg mixture into the pan.
  4. Using a wooden spoon, gently push the egg batter in all directions.
  5. Scrape the sides of the pan to ensure that egg doesn’t stick.
  6. Let the egg cook until it is only slightly creamy.
  7. Remove from heat and combine parsley and chives with the egg.
  8. Now, preheat a grill on high and toast the bagels by placing the cut side up.
  9. Once the bagels are toasted, place smoked salmon slices and spoon scrambled eggs on top.
  10. Enjoy with a sprig of dill.
