Glazed Salmon with Lemon(3 of 5)

Ingredients
- 4 pieces of salmon
- Black pepper, to taste
- Salt, to taste
- Extra virgin olive oil, to cook
- 2 lemons
- 3 garlic cloves, minced
- Unsalted butter, 3 tbsp
- Chicken stock (low sodium), 1 cup
- Parsley (chopped), 2 tbsp
Preparation
- Preheat a skillet over med-high heat. Pt dry salmon and season with salt and pepper.
- Add oil to the skillet and place salmon. Cook for 3 minutes until golden brown on one side. Flip and cook for another minute. Put it on a plate.
- Add butter to the same skillet along with lemon juice, lemon zest and garlic. Sauté for 1-2 minutes and season with salt and pepper. Let the mixture reduce to half.
- Add back salmon and toss in the sauce. Continue cooking for 3-4 minutes until totally covered and creamy.
- Serve with lemon slices and parsley on top.
