Ingredients

  • 4 zucchinis
  • Taco shells
  • Cilantro, chopped
  • Ground turkey
  • Onion, minced
  • 1/2 cup salsa
  • 1 Tbsp minced onion
  • 1 tsp garlic powder
  • 4 oz. tomato sauce
  • 1 small red bell pepper, seeded and diced
  • 1/2 Tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper

Preparation

  1. Preheat oven to 350 degrees F.
  2. Bring pot of water to boiling.
  3. Slice zucchinis’ in halves, lengthwise.
  4. Boil zucchinis’ on each side for a minute.
  5. Remove and let cool.
  6. Add the salsa to the bottom of a 9×13-inch glass baking dish and place zucchini into the dish.
  7.  Brown the ground turkey with the minced onion and garlic powder. Drain and return to the pan.
  8. Stir in the tomato sauce, diced bell pepper, chili powder, ground cumin, garlic powder, onion powder, and salt and pepper. Bring to simmer, then remove from heat.
  9.  Once zucchini has cooled, scoop the insides of the zucchini.
  10.  Spoon the taco meat into the zucchini and bake in the preheated oven for 10-15 minutes.
  11. Garnish when complete.
