Paleo Zucchini Boats(4 of 5)

Ingredients
- 4 zucchinis
- Taco shells
- Cilantro, chopped
- Ground turkey
- Onion, minced
- 1/2 cup salsa
- 1 Tbsp minced onion
- 1 tsp garlic powder
- 4 oz. tomato sauce
- 1 small red bell pepper, seeded and diced
- 1/2 Tbsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper
Preparation
- Preheat oven to 350 degrees F.
- Bring pot of water to boiling.
- Slice zucchinis’ in halves, lengthwise.
- Boil zucchinis’ on each side for a minute.
- Remove and let cool.
- Add the salsa to the bottom of a 9×13-inch glass baking dish and place zucchini into the dish.
- Brown the ground turkey with the minced onion and garlic powder. Drain and return to the pan.
- Stir in the tomato sauce, diced bell pepper, chili powder, ground cumin, garlic powder, onion powder, and salt and pepper. Bring to simmer, then remove from heat.
- Once zucchini has cooled, scoop the insides of the zucchini.
- Spoon the taco meat into the zucchini and bake in the preheated oven for 10-15 minutes.
- Garnish when complete.
