Ingredients

  • 1 T-bone steak (3” thick)
  • Fresh rosemary (chopped), 1 tbsp
  • Fresh sage leaves (chopped), 1 tbsp
  • Fresh thyme leaves, 1 tbsp
  • Freshly ground black pepper, 2 tbsp
  • Kosher salt, 2 tbsp
  • Extra virgin olive oil, 1 cup
  • Juice of 1 lemon
  • Spinach (washed, remove stems, spun dry), 4 lb
  • 6 garlic cloves

Preparation

  • Set the grill to preheat med-high setting.
  • In a mixing bowl, combine sage, rosemary, black pepper, thyme, and kosher salt. Mix well.
  • Place steak in a large baking dish and season with this mixture. Rub to coat well.
  • Add olive oil and rub more. Marinate for a few hours if you like.
  • Place on the grill and cook for 12 minutes on one side undisturbed. Flip and continue grilling for another 9 minutes or until it reaches desired doneness.
  • Meanwhile, heat ¼ cup olive oil in a sauté pan. When the oil is hot, add garlic and cook for 3 minutes. Add spinach and stir to mix well. Cook until wilted.
  • Remove from heat and season with salt, pepper and lemon juice.
  • When steak is done, remove and place on a serving platter along with spinach. Drizzle with some olive oil on the top and serve immediately.
