T-Bone Steak with Sautéed Spinach(4 of 6)

Ingredients
- 1 T-bone steak (3” thick)
- Fresh rosemary (chopped), 1 tbsp
- Fresh sage leaves (chopped), 1 tbsp
- Fresh thyme leaves, 1 tbsp
- Freshly ground black pepper, 2 tbsp
- Kosher salt, 2 tbsp
- Extra virgin olive oil, 1 cup
- Juice of 1 lemon
- Spinach (washed, remove stems, spun dry), 4 lb
- 6 garlic cloves
Preparation
- Set the grill to preheat med-high setting.
- In a mixing bowl, combine sage, rosemary, black pepper, thyme, and kosher salt. Mix well.
- Place steak in a large baking dish and season with this mixture. Rub to coat well.
- Add olive oil and rub more. Marinate for a few hours if you like.
- Place on the grill and cook for 12 minutes on one side undisturbed. Flip and continue grilling for another 9 minutes or until it reaches desired doneness.
- Meanwhile, heat ¼ cup olive oil in a sauté pan. When the oil is hot, add garlic and cook for 3 minutes. Add spinach and stir to mix well. Cook until wilted.
- Remove from heat and season with salt, pepper and lemon juice.
- When steak is done, remove and place on a serving platter along with spinach. Drizzle with some olive oil on the top and serve immediately.
