Potato chips are a tasty alternative to the oats typically found in granola bars. Protein-packed peanut butter and crunchy peanuts help keep you full and energized all day long.

Ingredients

  • 1 1/2 cups all-purpose flour or gluten-free cup-for-cup blend
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 stick unsalted butter, softened
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1 cup grape or strawberry jelly
  • 1 cup crushed kettle chips
  • 1/2 cup peanut butter chips
  • 1/4 cup chopped peanuts

Preparation

  1. Combine flour, baking powder, salt, butter, sugar, egg, vanilla, and peanut butter until a crust is formed.
  2. Press the crust into a 9 x 12 baking dish lined with parchment paper.
  3. Top the crust with a layer of jelly.
  4. Place crushed kettle chips, peanuts, and peanut butter tips on top of the jelly.
  5. Bake for 45 to 55 minutes at 350 degrees Fahrenheit.
  6. Let cool before cutting into bars.
