Trying to figure out how to make gluten-free chicken tenders without using nut meal or coconut flour? Potato chips are here to save the day!
Ingredients
- 2 packs of chicken tenders
- 2 eggs
- 1 cup buttermilk
- 12 ounces kettle chips, any variety
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/4 teaspoon Paprika
- 1/4 teaspoon black pepper
Preparation
- Pulse kettle chips and spices in a food processor until you have fine crumbs.
- Beat eggs and buttermilk in a small bowl.
- Dip each chicken tender in the egg and buttermilk mixture, then dunk it in the chips and spice blend.
- Bake on a sheet pan or wire rack for 20 to 25 minutes at 400 degrees Fahrenheit.
- Serve with ranch, hot sauce, or honey mustard dipping sauce.
That’s not Mac n Cheese in the pic, it looks like Tuna Casserole….but still yummy with crushed chips on top. I prefer sour cream and onion on my Tuna Casserole. Mmmmmmm!!!
