Trying to figure out how to make gluten-free chicken tenders without using nut meal or coconut flour? Potato chips are here to save the day!

Ingredients

  • 2 packs of chicken tenders
  • 2 eggs
  • 1 cup buttermilk
  • 12 ounces kettle chips, any variety
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon black pepper

Preparation

  1. Pulse kettle chips and spices in a food processor until you have fine crumbs.
  2. Beat eggs and buttermilk in a small bowl.
  3. Dip each chicken tender in the egg and buttermilk mixture, then dunk it in the chips and spice blend.
  4. Bake on a sheet pan or wire rack for 20 to 25 minutes at 400 degrees Fahrenheit.
  5. Serve with ranch, hot sauce, or honey mustard dipping sauce.
