Penne And Shrimp Pasta With Creamy Sauce(2 of 6)

Ingredients
- Penne pasta, 1 lb
- Olive oil, ¼ cup
- Garlic (minced), 3 tsp
- Medium-sized shrimp (deveined and peeled), 1 lb
- Sea salt, ½ tsp + more for seasoning
- Freshly ground black pepper, ½ tsp + more for seasoning
- Fresh basil leaves (chopped), ½ cup
- Whole tomatoes (drained, chopped), 1 can
- Fresh parsley (chopped) ½ cup
- Red pepper flakes, ¼ tsp
- White wine, 1 cup
- Clam juice, 1/3 cup
- Parmesan cheese (grated), ½ cup
- Heavy whipping cream, ¾ cup
Preparation
- Follow the instruction on the pasta package to prepare. Use salted water to boil. When tender, drain and pass through cold water. Set aside.
- Place a large skillet over med-high heat. Add oil.
- Add garlic along with shrimp and stir. Season with salt and pepper and stir to combine.
- Continue cooking, stirring frequently, for 3-4 minutes. This will allow the color of shrimp to turn pink. With the help of a slotted spoon, remove shrimp from the skillet and set aside.
- Add ¼ cup parsley, ¼ cup basil, tomatoes and red pepper flakes in the skillet. Cook for a minute while you continue to stir. Add heavy cream, clam juice and wine next.
- Mix and bring the mixture to a gentle boil. Adjust the heat to low-med and simmer for 8 minutes. When the sauce reaches the desired consistency, add ¼ cup of parmesan cheese. Combine and stir in cooked pasta and shrimp.
- Add remaining herbs and continue to stir to combine flavors.
- Toss until the ingredients are well incorporated. Season with more salt and pepper to adjust flavors.
- When done, transfer to a serving bowl. Sprinkle with remaining parmesan cheese and serve warm for refreshing flavors.
