Chicken Penne Pasta With Sundried Tomatoes And Kale(6 of 6)

Ingredients

  • 1 medium-sized yellow onion, finely sliced
  • Precooked boneless chicken (shredded), 1 cup
  • Sundried tomatoes (remove from oil), ½ cup
  • Kale (remove thick stems, chop leaves), 1 lb
  • White beans (no salt added, drained and rinsed), 1 can
  • Pasta, 1 pkg.
  • Salt, to taste
  • White pepper to taste
  • Olive oil, 1 tbsp

Preparation

  1. Remove sundried tomatoes from can and soak in warm water for 15 minutes. Keep the bowl covered to soften the tomatoes. Drain and slice.
  2. Cook pasta following the instructions on the package. When done, drain and set aside.
  3. In another pot, heat olive oil and add onions. Cook and stirring frequently until tender and translucent.
  4. Stir in beans, kale and ¾ cup water. Adjust heat to med and continue to cook for 8 minutes. Keep the pot covered.
  5. Remove lid and cook for another 5 minutes until most of the liquid has dried. Make sure that beans are thoroughly heated and greens are wilted.
  6. Add chicken to the pot and stir. Add sundried tomatoes and give it a good stir to combine everything. After 2 minutes, add pasta and combine everything. Toss to coat well and heat thoroughly.
  7. Your pasta is now ready to be served!
