Chicken Penne Pasta With Sundried Tomatoes And Kale(6 of 6)

Ingredients
- 1 medium-sized yellow onion, finely sliced
- Precooked boneless chicken (shredded), 1 cup
- Sundried tomatoes (remove from oil), ½ cup
- Kale (remove thick stems, chop leaves), 1 lb
- White beans (no salt added, drained and rinsed), 1 can
- Pasta, 1 pkg.
- Salt, to taste
- White pepper to taste
- Olive oil, 1 tbsp
Preparation
- Remove sundried tomatoes from can and soak in warm water for 15 minutes. Keep the bowl covered to soften the tomatoes. Drain and slice.
- Cook pasta following the instructions on the package. When done, drain and set aside.
- In another pot, heat olive oil and add onions. Cook and stirring frequently until tender and translucent.
- Stir in beans, kale and ¾ cup water. Adjust heat to med and continue to cook for 8 minutes. Keep the pot covered.
- Remove lid and cook for another 5 minutes until most of the liquid has dried. Make sure that beans are thoroughly heated and greens are wilted.
- Add chicken to the pot and stir. Add sundried tomatoes and give it a good stir to combine everything. After 2 minutes, add pasta and combine everything. Toss to coat well and heat thoroughly.
- Your pasta is now ready to be served!
