Ingredients

  • Cornstarch, 2 tsp
  • Evaporated milk, 1 can
  • Elbow macaroni pasta, ½ lb
  • 2 medium-sized eggs
  • American cheese (diced), ½ cup
  • Sharp cheddar cheese (grated), ½ cup
  • Hot sauce, ¼ cup
  • Precooked chicken meat (diced or shredded), 2 cups
  • Scallion greens (sliced), ½ cup
  • Blue cheese (crumbled), ½ cup

Preparation

  1. In a medium mixing bowl, combine evaporated milk, cornstarch, and eggs. Whisk until fully incorporated. Set aside.
  2. Use salted water to boil pasta and follow the instructions on the packaging. When done, drain (reserving 1 cup pasta water) and set aside.
  3. Add back the reserved water to the pot and cheeses, evaporated milk mixture, and hot sauce. Stir to combine well and cook over low heat. Allow the cheeses to melt so the mixture becomes smooth and creamy.
  4. Stir in scallions and chicken. Mix well. Add the pasta and toss to combine everything together.
  5. To serve, top with some scallions and blue cheese.
  6. Serve immediately for best flavors.
