Chicken Pasta With Thyme, Mushrooms, And Lemon(2 of 6)

The combination of pasta with mushrooms is just too good and when you add chicken, lemon, thyme, and ginger to the mix, it just gets better. This chicken pasta recipe will leave your guests impressed with your cooking skills.
Ingredients
- Cremini mushrooms (finely sliced, 4 cups)
- Olive oil (extra-virgin, 1/3 cup)
- Kosher salt (1 tablespoon)
- Clove garlic, (small, minced)
- 4 sprigs fresh thyme
- 3 tablespoons freshly grated Parmesan
- 1 pound linguine
- 1 lemon, zested and juiced
- Parsley (1 bunch, fresh, leaves chopped)
- Freshly ground black pepper
Preparation
- Finely slice the mushrooms and place them in a bowl.
- Add salt, minced garlic, oil, and lemon juice and zest into the bowl.
- Add thyme leaves to the bowl as well.
- In a large pot, cook the pasta following the package instructions.
- Once cooked, strain and leave a little water, and add it to the mushroom mixture bowl.
- Combine everything and add parsley, pepper, and cheese, and mix again.
