Have you ever tried pumpkin muffins that contain raisins? Yes, they taste delicious. Here is the recipe that when you make it once, you will want to make at least once every month!
Ingredients
- Flour, 1 ½ cups
- Rolled oats, ¾ cups
- Pumpkin spice, 1 ½ tsp
- Egg, 1
- Shelled sunflower seeds, 2/3 cup
- Sunflower oil, ¼ cup
- Canned pumpkin, ¾ cup
- Baking powder, 2 tsp
- Milk, ¾ cup
- Packed brown sugar, ½ cup
- Raisins, 1/3 cups
- Salt, a pinch
Preparation
- Grease 12, 2 ½ inches muffin cups and set aside. Preheat oven to 400 degrees F.
- Add all the dry ingredients, expect sunflower seeds and raisins, to a bowl and create a well in the middle.
- Add in all the wet ingredients and mix well. The batter would be lumpy.
- Now fold in the sunflower seeds and raisins and mix gently.
- Pour batter in muffin cups and bake for 25 minutes. Insert a toothpick to see if the muffins are done. Take out of the oven and let cool.
- Take out of the muffin tins and serve warm!
