Cool down on a warm summer day with a bowl of this chilled avocado soup.
Ingredients
- 3 large avocados, pitted and mashed
- 2 garlic cloves
- ¼ cup cilantro leaves
- 1 bunch of scallions, minced, white and green parts separated
- ¼ cup fresh lemon juice
- ¼ teaspoon each: ground cumin and sweet smoked paprika (pimenton)
- 3 cups chicken broth
- Salt and pepper to taste
Preparation
- Combine ingredients in a blender or food processor, leaving out the green scallions, and pulse until smooth.
- Garnish with green scallions.
