Why have french fries when you can have avocado fries? Replace the popular carb-heavy side with these amazing avocado wedges. Enjoy them on their own with ketchup or ranch, or serve them with burgers, hot wings, or chicken nuggets.

Ingredients

  • 3 ripe avocados
  • ½ cup all-purpose or gluten-free flour
  • 2 eggs
  • 1½ cups panko breadcrumbs
  • 1 tbsp butter, melted
  • 1 tsp of lime juice
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • Cooking spray

Preparation

  1. Slice avocados lengthwise, taking care not to mash the avocados as you slice them. Drizzle them with lime juice to prevent discoloration.
  2. Place flour in a bowl with salt and pepper.
  3. Place eggs in a separate bowl and beat gently until yolks and whites are combined.
  4. Combine remaining ingredients in a third bowl and gently mix.
  5. Dip each avocado slice in flour, then eggs, then the panko mixture, and place the coated avocado pieces on a tray.
  6. Spray avocados with cooking oil and bake at 425 degrees Fahrenheit for 17 to 22 minutes.
