Shrimp-stuffed avocados are popping up in restaurants and home kitchens around the world. They make amazing breakfasts, dinners, and appetizers and require very little prep time.

Ingredients:

  • 3 large ripe avocados
  • 1 lime wedge
  • 1 pound fresh raw shrimp, chopped
  • 1 red Fresno chili, minced
  • ½ cup finely diced white or yellow onion
  • 2 tablespoons fresh cilantro, minced
  • 2 tablespoons fresh lime juice
  • ½ cup orange juice
  • 2 tablespoons olive oil
  • Sea salt to taste

Preparation

  1. Slice each avocado in half and remove the seeds. Drizzle with lime juice, then sprinkle a small amount of sea salt on each piece.
  2. In a small bowl, combine the shrimp, chili, onion, and cilantro. Stir gently and let sit for approximately 10 minutes.
  3. Add olive oil and orange juice to the mixture, and spoon into the 6 avocado pieces.
  4. Top with a dash of sea salt and black pepper, if desired.
