Shrimp-Stuffed Avocados(3 of 10)

Shrimp-stuffed avocados are popping up in restaurants and home kitchens around the world. They make amazing breakfasts, dinners, and appetizers and require very little prep time.
Ingredients:
- 3 large ripe avocados
- 1 lime wedge
- 1 pound fresh raw shrimp, chopped
- 1 red Fresno chili, minced
- ½ cup finely diced white or yellow onion
- 2 tablespoons fresh cilantro, minced
- 2 tablespoons fresh lime juice
- ½ cup orange juice
- 2 tablespoons olive oil
- Sea salt to taste
Preparation
- Slice each avocado in half and remove the seeds. Drizzle with lime juice, then sprinkle a small amount of sea salt on each piece.
- In a small bowl, combine the shrimp, chili, onion, and cilantro. Stir gently and let sit for approximately 10 minutes.
- Add olive oil and orange juice to the mixture, and spoon into the 6 avocado pieces.
- Top with a dash of sea salt and black pepper, if desired.
