Something about warm weather makes us want to swap our heavy, cream-based recipes for light and lemony dishes like this slow cooker lemon herb chicken.
Ingredients
Servings: 4
- 4 boneless skinless chicken breasts
- 2 tablespoons butter
- salt and pepper to taste
- 3 teaspoons Italian seasoning
- 1 cup uncooked rice
- 2¼ cups chicken broth
- juice of 1 lemon
Preparation
Total prep time: 10 minutes
- Add rice to crockpot and season with 1 teaspoon of Italian seasoning. Cover with chicken broth and butter.
- Top with chicken breasts. Squeeze lemon juice over chicken breasts, then top with remaining ingredients.
- Cook on high for 2 to 4 hours or low 6 to 8 hours.
