Servings: 4 – 6

  • 12 chicken drumsticks
  • Olive oil, ½ cup
  • Sea salt, 1 tsp
  • Ground black pepper, ½ tsp
  • Paprika, ½ tsp
  • Cumin (ground), ½ tsp
  • Cayenne pepper, ¼ tsp
  • Garlic (chopped), 2 cloves
  • Onion (chopped), 3 tbsp
  • Fresh parsley (chopped), ½ cup
  • Beer, 1 ½ cup


Total prep time: 10 minutes; Total cook time: 20 minutes

  1. Place washed and cleaned chicken drumsticks into a sealable bag.
  2. In a medium mixing bowl, combine olive oil, cayenne pepper, cumin, paprika, black pepper, and salt together. Add onions, garlic, and parsley in the mixture and stir well to combine. Add beer to the mixture. Make sure you do it slowly as it will cause the mixture to bubble slightly.
  3. Once the marinade is prepared, pour it into the zip lock bag with chicken drumsticks. Seal and shake to coat. For best results, marinade overnight or let it rest for at least 2 hours.
  4. To grill, remove the chicken drumsticks from the marinade. Brush olive oil to the grill to grease. Set to a preheat setting of 350 degrees F. place the chicken and cook for 8-10 minutes on each side. Turn and cook on all sides as required. Transfer to a platter when completely cooked.
  5. Let sit for 5 minutes covered in foil. Remove foil and serve immediately for best flavors.
