Servings: 4

  • 4 chicken breast fillets, skinless and trimmed
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Red chili flakes, to taste
  • Garlic (minced), 3 cloves
  • Fresh rosemary (chopped), 1 tbsp
  • Dried rosemary, 1 tbsp for topping
  • Flat-leaf parsley (chopped), 1 tbsp
  • Fresh basil (chopped), ½ tbsp
  • Lemon juice, ¼ cup + 4 lemon wedges
  • Extra-virgin olive oil, ¼ cup + more for drizzling


Total prep time: 30 minutes; Total cook time: 20 minutes

  1. Arrange chicken fillets on a greased baking sheet.
  2. In a small bowl, combine salt, pepper, chili flakes, rosemary, parsley, basil, and garlic. Stir to combine the marinade well.
  3. Drizzle both sides of chicken fillets with olive oil and lemon juice and apply the dry marinade mixture. Rub with your hands to coat well. Set to refrigerate for 20 minutes before grilling.
  4. Meanwhile, prepare the grill and grease it with some olive oil.
  5. Adjust the heat to med-high and set the fillets and cook for 6-8 minutes on each side undisturbed. When the chicken is cooked to desired doneness, transfer to a platter.
  6. Sprinkle dried rosemary on the top and lemon wedges on the size.
  7. Enjoy the warm, delicious flavors.
