Classic Italian Marinade Roasted Chicken

Servings: 2 – 3

  • 2 large boneless chicken fillets
  • Olive oil, ¼ cup
  • Balsamic vinegar, ¼ cup
  • Garlic (roughly chopped), 1 large clove
  • Fresh parsley (minced), 1 tbsp
  • Fresh basil (minced), 1 tbsp
  • Red chili flakes, ½ tsp + more for garnish
  • Honey, 1 tbsp
  • Salt, to taste
  • Freshly ground black pepper, to taste


Total prep time: 15 minutes; Total cook time: 20 minutes

  1. Combine olive oil, balsamic vinegar, garlic, parsley, basil, honey, and chili flakes in a mixing bowl. Add salt and pepper and whisk to incorporate all the ingredients together.
  2. Poke holes in the chicken and place them in the bowl and coat well. Refrigerate and let sit for at least 2 hours or overnight.
  3. To prepare, preheat the grill and cook for 6-8 minutes on each side. Flip once and cook on the other side until fully cooked.
  4. Remove from the grill and transfer to a serving platter. Squeeze fresh lemon juice on the top and some additional chili flakes and serve warm.
