Grilled Chicken With Oregano And Lemon Marinade(5 of 6)

This one’s a terrific chicken recipe with refreshing flavors. Prepare the marinade and don’t forget to squeeze the grilled lemon on top for best flavors.
Ingredients
Servings: 6
- Lemon zest (grated), 1 tbsp
- Lemon juice (freshly squeezed), 1/3 cup
- Fresh oregano (finely chopped), ¼ cup
- Olive oil, 2 tbsp + more
- Salt, to taste
- Freshly ground black pepper, to taste
- Chicken breast fillets, 2 lbs
- 4 medium-sized lemons, halved crosswise
- Fresh oregano sprigs, for garnish
Preparation
Total prep time: 30 minutes; Total cook time: 20 minutes
- Start with preparing the marinade. Whisk lemon juice and zest in a bowl. Stir in oregano, oil, salt and pepper and whisk to mix well. Add the marinade to a large re-sealable plastic bag along with the chicken fillets. Seal and shake to coat well. Let sit for at least 30 minutes in room temperature before grilling the chicken.
- To prepare, set the grill to preheat setting and grease with oil. Remove chicken and pat dry. Place it on the grill and cook for 8-10 minutes undisturbed on one side until cooked. Turn and continue cooking until it is fully cooked. Remove and place it on a platter. Slice if you like. Cover with a foil and let rest.
- Meanwhile, place lemon halves on the preheated grill and cook for a few minutes until slightly charred.
- Serve chicken with grilled lemon on the top. Garnish with oregano sprigs and serve warm for best flavors.
