Ingredients

  • 8 oz. of cream cheese
  • 1/3 cup of sugar
  • 2 egg yolks
  • 2 tbsp of ricotta cheese
  • 1 tsp of vanilla extract
  • 1/4 tsp of salt (kosher)
  • 1 tbsp of lemon zest (grated)
  • 2 sheets of frozen puff pastry

Egg Mixture:

  • 1 tbsp of water
  • 1 egg

Preparation

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Use parchment paper to line a baking sheet.
  3. Combine the sugar and cream cheese in an electric mixer.
  4. Combine them together on low speed.
  5. Add the egg yolks, salt, vanilla, ricotta, and lemon zest to the mixer bowl while it is turned on.
  6. Flour the board and place a sheet of puff pastry on it.
  7. Use a rolling pin to roll into 10 X 10-inch squares.
  8. Use a serrated knife to cut the sheet.
  9. Place 1 tbsp of cheese filling into the center of each square.
  10. Use a brush to baste the border of the pastry with egg mixture.
  11. Fold opposite corners of the pastry, bringing them to the middle.
  12. Brush the top part of the pastries with the egg mixture to stick them together.
  13. Place them on a baking pan.
  14. Repeat the same process for the remaining puff pastry.
  15. Place it in the fridge for about 15 minutes.
  16. Bake the pastries in the oven for 20 minutes, rotating the pan only once.
  17. Serve warm.
