Muffin tops are just as tasty as regular muffins, but they’re smaller. Kids love them.
Ingredients
- 1 cup of oatmeal
- 1 cup of buttermilk
- 1 egg
- 1/2 cup of brown sugar
- 1/2 tsp of vanilla extract
- 1/3 cup of vegetable oil
- 1 1/4 cups of flour
- 1/2 tsp of baking soda
- 1/2 teaspoon of salt
- 1 tsp of baking powder
- 1/2 tsp of cinnamon
- 1 cup of blueberries
- 1 cup of walnuts, chopped
Preparation
- Preheat oven to 400 degrees Fahrenheit. Soak oats in buttermilk for 10 minutes.
- Sift the flour, baking soda, salt, baking powder, and cinnamon.
- Add an egg, oil, vanilla and brown sugar to the oats and buttermilk mixture and stir gently to combine.
- Add dry ingredients to wet ingredients and stir, then fold in walnuts and blueberries.
- Bake for 15 to 20 minutes.
