Muffin tops are just as tasty as regular muffins, but they’re smaller. Kids love them.

Ingredients

  • 1 cup of oatmeal
  • 1 cup of buttermilk
  • 1 egg
  • 1/2 cup of brown sugar
  • 1/2 tsp of vanilla extract
  • 1/3 cup of vegetable oil
  • 1 1/4 cups of flour
  • 1/2 tsp of baking soda
  • 1/2 teaspoon of salt
  • 1 tsp of baking powder
  • 1/2 tsp of cinnamon
  • 1 cup of blueberries
  • 1 cup of walnuts, chopped

Preparation

  1. Preheat oven to 400 degrees Fahrenheit. Soak oats in buttermilk for 10 minutes.
  2. Sift the flour, baking soda, salt, baking powder, and cinnamon.
  3. Add an egg, oil, vanilla and brown sugar to the oats and buttermilk mixture and stir gently to combine.
  4. Add dry ingredients to wet ingredients and stir, then fold in walnuts and blueberries.
  5. Bake for 15 to 20 minutes.
