Make this homemade granola bar recipe the night before, or even several days in advance, and grab a bar on your way out the door. Earl Grey tea lends a memorable flavor to these heart-healthy granola bars.
Ingredients
- 2 cups of rolled oats
- ½ cup of raw cashews, chopped
- 1 cup of crisp rice cereal
- ½ lemon, zest only
- ½ cup of honey
- ¼ cup of coconut oil
- ¼ cup of almond butter
- 1 tbsp white sugar
- 1 tbsp of pure vanilla extract
- 1 tbsp of Earl Grey tea, loose leaf
Preparation
- Preheat the oven to 300 degrees Fahrenheit, then grease and line a 9 x 9 inch baking pan with parchment paper. Leave some paper hanging over the edges so you can remove the bars easily.
- Toast oats and cashews for 5 to 10 minutes, then combine with crisp rice cereal and lemon zest.
- Melt honey, coconut oil, almond butter, and sugar over medium heat, then whisk in vanilla and Earl Grey tea.
- Add the wet ingredients to the dry ingredients and stir to coat well.
- Pour mixture into the lined baking pan and bake for approximately 20 minutes.
