Make this homemade granola bar recipe the night before, or even several days in advance, and grab a bar on your way out the door. Earl Grey tea lends a memorable flavor to these heart-healthy granola bars.

Ingredients

  • 2 cups of rolled oats
  • ½ cup of raw cashews, chopped
  • 1 cup of crisp rice cereal
  • ½ lemon, zest only
  • ½ cup of honey
  • ¼ cup of coconut oil
  • ¼ cup of almond butter
  • 1 tbsp white sugar
  • 1 tbsp of pure vanilla extract
  • 1 tbsp of Earl Grey tea, loose leaf

Preparation

  1. Preheat the oven to 300 degrees Fahrenheit, then grease and line a 9 x 9 inch baking pan with parchment paper. Leave some paper hanging over the edges so you can remove the bars easily.
  2. Toast oats and cashews for 5 to 10 minutes, then combine with crisp rice cereal and lemon zest.
  3. Melt honey, coconut oil, almond butter, and sugar over medium heat, then whisk in vanilla and Earl Grey tea.
  4. Add the wet ingredients to the dry ingredients and stir to coat well.
  5. Pour mixture into the lined baking pan and bake for approximately 20 minutes.
