This hearty breakfast is packed with protein without relying on sausage or bacon. It’s a tasty way to start the morning if you’re a vegetarian or following a gluten-free diet.
Ingredients
- 1 large portobello mushroom, stem removed
- Olive oil spray
- ⅛ teaspoon of garlic powder
- 1 egg
- 1 tablespoon of grated Parmesan cheese
- 1 tablespoon of chopped parsley
- Salt and pepper
Preparation
- Preheat broiler on high and line a baking sheet with foil.
- Spray the mushroom with olive oil and broil each side for 3 to 5 minutes.
- Remove mushrooms from oven, and switch the oven to 400 degrees Fahrenheit.
- Break the egg into the mushroom and sprinkle with cheese and spices, then bake for 10 to 15 minutes.
- Serve topped with chopped parsley.
