This hearty breakfast is packed with protein without relying on sausage or bacon. It’s a tasty way to start the morning if you’re a vegetarian or following a gluten-free diet.


  • 1 large portobello mushroom, stem removed
  • Olive oil spray
  • ⅛ teaspoon of garlic powder
  • 1 egg
  • 1 tablespoon of grated Parmesan cheese
  • 1 tablespoon of chopped parsley
  • Salt and pepper


  1. Preheat broiler on high and line a baking sheet with foil.
  2. Spray the mushroom with olive oil and broil each side for 3 to 5 minutes.
  3. Remove mushrooms from oven, and switch the oven to 400 degrees Fahrenheit.
  4. Break the egg into the mushroom and sprinkle with cheese and spices, then bake for 10 to 15 minutes.
  5. Serve topped with chopped parsley.
