Love muffins but need something to replace your regular varieties? Try these antioxidant-rich pomegranate oatmeal muffins.
Ingredients
Wet
- 2 eggs
- ⅓ cup of pomegranate juice
- 1 teaspoon of vanilla extract
- 1 banana
- ½ cup of almond milk
- 2 tablespoons of coconut oil
Dry
- 2 cups of quick cooking oatmeal
- 1 teaspoon of baking powder
- ½ cup of pomegranate arils, separated
Preparation
- Preheat oven to 350 degrees Fahrenheit and grease or spray a muffin tin.
- Mash banana in a bowl, then add remaining wet ingredients.
- Add dry ingredients and stir gently, then pour into muffin tins.
- Bake for 17 to 20 minutes.
- Top with additional pomegranate arils, if desired.
