The lemon bars are delicious, creamy, and extra citrusy. Parents can cook lemon bars with children for bake sale.

You can bake extra lemon bars to store them in your fridge to eat later.

Ingredients

  • 1 1/2 cups of all-purpose flour
  • 2/3 cup of granulated sugar
  • 2/3 cup of room temperature butter (unsalted)

Filling:

  • 6 eggs
  • 2 cups of granulated sugar
  • 3 freshly squeezed lemons
  • 1/2 cup of all-purpose flour
  • 100 g of packaged candied citron peel
  • Icing sugar for dusting

Preparation

  1. Preheat your oven for 350 degrees Fahrenheit.
  2. Spread butter on your baking dish (9 X 13).
  3. In a bowl, combine sugar and flour.
  4. Use your hands to crumble the butter into coarse pieces.
  5. Place the butter crumbs on the baking dish, press them down to level them, and bake for 18 minutes, or until the edges turn golden.
  6. Place the baking tray on a rack.
  7. Use the same bowl to whisk eggs and sugar together.
  8. Add lemon juice, strain flour on top of it, and whisk until smooth.
  9. Sprinkle 1/2 of the citron peel on top of the base, pour lemon filling over it, and bake for 30 minutes.
  10. Take it out and let it cool.
  11. Sprinkle the lemon bars with sugar and citron peel, slice into bars, and serve.
