Chocolate mint cookies are goodies with chocolate mint frosting on top. When you take a bite, you will taste a flavorful combination of soft chocolate cookies and mint.
When you sell them at the bake sale and be sure they will become a hit, especially amongst people who love mint and chocolate.
Ingredients
- 3/4 cup of butter
- 1 1/2 cups of brown sugar (packed)
- 2 tbsp of water
- 2 cups of chocolate chips (semisweet)
- 2 eggs
- 2 1/2 cups of all-purpose flour
- 1 1/4 tsp of baking soda
- 1/2 tsp of salt
- 36 chocolate mint wafer candies
Preparation
- In a pan, add sugar, butter, and water and place it over low heat to melt the butter.
- Include chocolate chips and stir to soften them a little.
- Remove the pan from heat and stir to melt the softened chocolate.
- Pour the mixture into a bowl and allow it to cool for 10 minutes.
- Beat the eggs into the chocolate mixture, one at a time, on high speed.
- Decrease speed and add baking soda, all-purpose flour, salt into the mixture, and beat to mix.
- Place the dough into the fridge for an hour.
- Preheat your oven to 350 degrees Fahrenheit.
- Make small balls, put them 2 inches apart on an ungreased baking sheet, and bake for 10 minutes.
- Unwrap the mints and cut each mint in half.
- Place half of each mint on the center of the cookie, let the mint melt into the cookies, and use a knife to spread the mint on the cookie.
- Serve.
