4) Marinated Grilled Shrimp For Lunch (4 of 7)

Ingredients
- Garlic (minced), 3 cloves
- Olive oil, 1/3 cup
- Tomato sauce, ¼ cup
- Red wine vinegar, 2 tbsp
- Fresh basil (chopped), 2 tbsp
- Salt, ½ tsp
- Cayenne pepper, ¼ tsp
- Fresh shrimp (deveined, peeled), 2 lb
Directions
- Stir together olive oil, garlic, red wine vinegar, and tomato sauce in a large mixing bowl. Season with cayenne pepper, basil, and salt.
- Add shrimp to the bowl and stir to coat evenly.
- Cover and set to refrigerate for 1 hour before grilling them.
- Set the grill to preheat setting and grease it with olive oil.
- Remove shrimp from marinade and place on the grill. Discard marinade.
- Cook shrimp for 2-3 minutes on each side or until opaque.
- Transfer to a platter and serve warm.
