This asparagus bread with hollandaise salad is perfect for lunch-time and you can take it to work as well.
Ingredients
- Extra virgin olive oil – 3/4 cup
- Fresh dill – 1/4 cup
- Pine nuts – 1/3 cup
- Cubed focaccia – 1/2 pound
- Trimmed white asparagus – 1 1/2 pounds
- Peeled shallot – 1
- Pasteurized egg yolks – 2
- White wine vinegar – 2 tablespoons
- Dijon mustard – 2 teaspoons
- Salt & pepper – to taste
- Spring salad mix – 1 package
Preparation
- Toast bread and pine nuts in 350 degrees oven until golden.
- Add asparagus to a pot of salted boiling water and cook for 2 minutes. Transfer the asparagus into a bowl of cold water and slice into small pieces when cold.
- Mix dill, shallot, vinegar, yolks, mustard, ¼ tsp salt, and ¼ tsp pepper in a blender. Add olive oil and mix a little and transfer to a bowl.
- Add asparagus into a bowl alongside bread, pine nuts, and ½ cup dressing.
- Add more green veggies into the bowl and enjoy.
