This pasta recipe is basically a savory bean, seasoned pasta soup. Use parmesan cheese and basil to garnish for best flavors.

Ingredients

  • Ground beef, 1 lb
  • Small-sized onion (diced), 1 cup
  • Celery (chopped), 1 cup
  • Carrot (julienned), 1 cup
  • Garlic (minced), 2 tsp
  • Diced tomatoes, 2 cans
  • Red kidney beans (along with liquid), 1 can
  • Great northern beans (along with liquid), 1 can
  • V-8 juice, 1 can
  • Tomato sauce, 1 can
  • White vinegar, 1 tbsp
  • Salt, 1 ½ tsp
  • Basil, 1 tsp
  • Oregano, 1 tsp
  • Pepper, ½ tsp
  • Thyme, ½ tsp
  • Ditali pasta, ½ pkg.

Preparation

  1. Place a large nonstick pot or saucepan over low-med heat. Add ground beef and cook until browned. Cook for 10-12 minutes until done. Drain most of the fats off.
  2. Add carrots, onion, garlic, and celery in the pan. Sauté for 10 minutes, stirring constantly.
  3. Add all the remaining ingredients (except pasta). Combine to adjust flavors and let it simmer for one hour.
  4. Meanwhile, prepare pasta following the package instructions in salted water. 50 minutes into the simmering, add pasta to the pot and simmer for remaining 10 minutes.
  5. Stir to combine everything and serve warm. Enjoy!
