German Inspired Slow Cooked Roast Beef(1 of 5)

Ingredients
- 4 lbs beef rump pot roast (boneless)
- 1 tbsp of oil
- 2 cups of carrots (sliced)
- 2 cups of onion (chopped)
- 1 cup of celery (sliced)
- 3/4 cup of dill pickle (chopped)
- 1/2 cup of beef broth (dry)
- 1/3 cup of German mustard
- 1/2 tsp of black pepper
- 1/4 tsp of cloves
- 2 bay leaves
- 2 tbsp all-purpose flour
- 2 tbsp of beef broth (dry)
- Cooked noodles
Preparation
- Trim fat, slice the roast to fir into a slow cooker (4 qt)
- Place the meat in the oil, browning all sides, and drain fat
- Combine onion, pickle, carrot, and celery in the slow cooker
- Add 1/2 cup of beef broth, mustard, cloves, black pepper, and bay leaves
- Pour the mixture on top of meat and veggies in the slow cooker
- Cook for 10 hours on low setting
- Use a slotted spoon to take out the meat and veggies, put them on a platter, and cover it with foil
- Pour the cooking liquid to a pan, skim fat, and remove the bay leaves
- Combine flour and 2 tbsp of beef broth into the pan
- Cook for 2 minutes over medium heat, keep stirring
- Pour over meat and serve with noodles
