There is nothing more delicious and healthier than poached salmon, especially when it is cooked over a bed of veggies. This poached salmon recipe is enjoyed by many Americans and is the got- option when it comes to eating healthy.

Ingredients

  • Several sprigs of fresh dill or sprinkle of dried dill
  • Salt
  • Freshly ground black pepper
  • A sprig of fresh parsley
  • 1 shallot, peeled and thinly sliced
  • A few slices of fresh lemon to serve
  • 1 to 1½ pounds salmon fillets, (the pin bones from these fillets need to be removed)
  • a few thin slices of onion
  • ½ cup water
  • ½ cup dry white wine

Preparation

  1. Sprinkle some salt over salmon fillets.
  2. Now add the parsley, shallots, onions, wine, dill, and water in a sauté pan and cook over medium heat.
  3. Once it starts to simmer place salmon skin side down into the pan and cover the lid.
  4. Cook salmon for 10 minutes or until it’s cooked to your requirements.
  5. Do not overcook salmon as it will get dry.
  6. Place on a flat plate and garnish with salt and pepper, and lemon slices.
